The cellar can store about 220 hectolitres. Once the grapes are smashed, - these grapes are picked and carefully selected by hand- juice, these juice ferments under controlled temperature in stainless steel depots. The black grapes are settled for aperiod of about 12 - 15 months in French and American oak casks. The white wines, Chardonnay and Torre des Canonge ferment and mature for over three months in new French oak casks.
