They keep a very simple cellar. The storing maceration depots/tanks are built in stainless steel and can store 6,100 litres. There are some other storing depots of 3,300 litres with a special inner device to control temperature. Each maceration and keeping depot corresponds to a different wine variety. Every single detail is taking into account in the wineyard. As for white wine, must is extracted after slight maceration under temperaure control; afterwards, fermentation in American and French oak barrels takes place. On the other hand, red wines are macerated in other depots under temperature control and then, they are kept in French and American oak barrels.
