Can Majoral Son Roig comes from ecologically grown vines free of chemicals, following its natural cycle and biological processes; being these a must in the production of can majoral wines.
Most of the vine is cabernet sauvignon although they also produce some Syrah and Merlot. Maceration – fermentation, in submerged bonnet, last from 20 to 25 days, at 28º C in stainless steel depots. The bled wine, and a small amount of the prensado, is left to rest until malolactic fermentation takes place. After this procedure is carried out, it is poured into oak barrels. Ageing is a process carried out in american oak barrels, 25%, allier, 75%, 225 liters. This process lasts for about 12-14 months until the wine reaches the wished softness. This wine is neither filtered nor estabilized in coldness thus it can have tartic precipitation. It is characterized by its astringent and mature tannin, deep cherry colouring, intense aroma, mainly fruty (black bery and cassis) qith spicy notes and vegetables such as pepper. It also shows terciary toast notes. It is fleshy in the mouth, with an elegant and persistent structure
